Highway 61 is INCREDIBLE, but Blonde on Blonde is just awesome. I mean really guys, Blonde on Blonde is better.

Blonde on Blonde isn't as good as they say. There's a couple of albums better than it. But really, he has different "eras" so to say, so there's not really a good place to start. But:
For his acoustic stuff: Another Side --> Freewheelin' --> s/t --> The Times They Are a-Changin'
For his EARLY "electric" stuff: Highway 61 Revisited --> Bringing It All Back Home --> Blonde On Blonde
Country-ish stuff: John Wesely Harding --> Blood On The Tracks --> Desire --> Nashville Skyline --> Pat Garrett & Billy The Kid --> New Morning --> Selfportrait (but only if you like Nashville Skyline) --> Planet Waves
His Jesus stuff: Slow Train Coming --> Shot Of Love --> Saved (but really, if you want to skip his Jesus stuff, feel free. It's not all that good.)
His "New Wave" stuff: Infidels --> Empire Burlesque --> Street-Legal --> Oh Mercy --> Under The Red Sky --> Down In The Groove (You can skip the last four here too.)
His "screw it I'm folk" stuff: World Gone Wrong --> Good As I Been To You
His "hey, I'm still good" stuff: Time Out Of Mind --> Christmas In The Heart --> Modern Times --> Love And Theft --> Together Through Life
