for jazz, look at the stuff that's been posted in my jazz thread, plus John Coltrane's Impressions, Miles Davis's Kind of Blue, Thelonious Monk, Charles Mingus, Joe Henderson.
For blues, try Elmore James, Blind Lemon Jefferson, BB King, Albert King.

...and anyone else with wider tastes... Broaden my horizons. Give me reggae, jazz, classical, blues, different stuff. Reggae: You HAVE to try Matisyahu. Jazz: Not much of a jazz guy. Classical: Something 20th century or later... try some opera or Yiruma or something. Blues: Not big on blues.

I'll admit, Bob Marley's my most listened to Reggae artist, but I still know a bit, and I'd reccomend Toots and the Maytals and Lee Scratch Perry for more traditional stuff. Getting out there more I'd say Tappa Zukie and Black Uhuru.
Jazz, I'd say start with some Miles Davis and John Coltrane. I'd also heartily reccomend Sun Ra and Charles Mingus. If you want some wierder shit, I'd be pleased to help.
Classical, pretty much the standards for starters, Brahms, Mozart, Tchaikovsky, Wagner, Vivaldi, Beethoven.... I've been looking into some more modern classical lately so I don't really have some good reccomendations in that area yet.
Blues, Robert Johnson is the number one pick. He's really the first trace of Rock N' Roll you can find in music. Other great ones are SRV, Albert King, Muddy Waters, and John Lee Hooker.

Really good for reading U-Men: Rock-a-billy grunge music Portishead: Go get their debut and you will be a happy person. They're music hasn't really aged well, but hey, their amazing. Danger Mouse: Listen to "The Gray Album", a mash-up of The Beatle's "White Album" and Jay-Z's "Black Album". Brian Eno: 'Nuff said.
